Cameroon runs from coast and mountains to desert and rainforest, which is why it gets called Africa in miniature. In the fertile Sanaga and Mbam basin the conditions suit cocoa, and careful fermentation brings out the full intensity of the region's red Trinitario beans.
A plain milk bar with nothing added to it. Cocoa, sugar, cocoa butter, whole milk powder and a little natural vanilla. The depth comes from the beans and the fermentation: roasted cocoa up front, cooked milk and caramel to balance it, and dried fruit on the finish.
